About The Wines

2007 Dref Cabernet Sauvignon
The 2007 Dref Cabernet Sauvignon is dark red with aromas of red berry fruit. It is medium bodied, having aged in new French and American oak, producing excellent character.

Food and Cheese Pairings
The 2007 Dref Cabernet Savignon is a wonderful wine to go with any grilled dark meat, classically paired with barbequed steaks or pasta. This wine would go stunningly paired with grilled duck breast as well.

Salty cow’s milk cheeses would work best with this wine as would mild blue cheeses, English Wensleydale, aged Gouda, Le Moulis, Tarentaise or Vacherin Fribourgeois

2007 Mélange de Frederick
A blend of Shiraz and Merlot, this assemblage has pronounced blackberry and cassis aroma with a hint of spices. It is full bodied and mouth filling with subtle tannins from 24 months of maturation in French oak barrels. The finish is pleasant and persistent.

Food and Cheese Pairings
This wine is well suited to any meaty dish. A great choice for pairings with dry aged T-bone or porterhouse steaks, pâtés, rare seared tuna, sausages, rabbit, venison or spicy South American cuisine. It is also equally good as a marinade as it is in the glass.

Treat yourself or guests with a glass of our 2007 Melange de Frederic and Cantalet, Camembert, sharp Cheddar, Gruyere, Pecorino Toscano, Edam, Gouda or St. Nectaire.

2008 Liew Chardonnay
The 2008 Liew Chardonnay is full of aromas of fruit and melon and hint of spices. It is delightfully full bodied and mouth filling with a lingering finish of subtle oakiness.

Food and Cheese Pairings
Pair with vanilla or olive oil/butter poached lobster or even a lobster risotto.

Ripe, creamy cheeses, like Camembert and Brie, will complement this Chardonnay. This wine would be wonderful with a special holiday roast turkey or a week day meal of veal.

2008 Cabernet Sauvignon

2008 Merlot

2009 Melange
(Blend of Merlot and Cabernet Sauvignon)
This blended red of Merlot and Cabernet Sauvignon appears ruby red with garnet tinting. The nose shows aromas of dried cranberries, strawberry and plum fruit with a herbal edge and complex earthy and cured meat notes.

The palate is soft and round with dry, food friendly tannins and displays flavours of plum, dill, coconut and barrel spice.

2010 Melange
(Blend of Cabernet Sauvignon, Merlot and Shiraz)

2011 Merlot
Appearing a medium ruby colour with a youthful pink rim. this Merlot grown in the warm Four Mile Creek appellation of the Niagara Peninsula is perfumed with raspberry and black cherry, dark chocolate and spiced fruitcake aromas.

The palate is plush and mouthfilling with flavours of fresh black raspberries, mocha, cedar box and pencil shavings, with a long, lingering finish.

2009 Chardonnay
Sourced from our own vineyard, this small lot barrel-fermented, barrel-aged Chardonnay appears straw-gold in the glass.

Uplifted aromatics of baked apples, vanilla, barrel spice and brioche is complemented on the palate by a lively acidity indicative of the vintage. A well-structured, medium body with a full mid-palate leads to a smooth, lasting finish.

2010 Chardonnay
This 2010 vintage brought with it a long growing season with lots of heat and just enough rain to feed the vines on our vineyard. Our Chardonnay was brought in at peak ripeness resulting in a wine with a deep golden hue and full of aromatic intensity. Pineapple and peach compote fruit character are accompanied by butter, wood and pie-crust on the nose.

The palate replays the flavors of the nose and offers a full creamy mouthful and a spicy, warm, persistent finish.

2011 Chardonnay

2012 Chardonnay
This 100% barrel-fermented, barrel-aged Chardonnay appears bright, clear with intensely straw-yellow and gold hues in the glass. The nose is intensely ripe belying the warm vintage, offering aromas of pineapple, golden apple, vanilla, butterscotch and a crush-rock mineral streak.

The palate is full and rich and warm, with flavours of baked apple and pear, toasty oak and a spicy finish.
